Yes--I love squirrels !!! I had a huge tree fall on my house the other day during a major storm here in New York, and inside the tree were approximately 20 squirrels that I fed on a regular basis...Happy to report they're all alive !!!!!!!!!

There's about a dozen of em' in the freezer just waiting for a reunion in a frying pan.  Good Eats them squirrels.

6 Squirrels skinned and quartered.

In a large frying pan (or pot with large bottom area) bring to 4 cups of salted water to boil (basically salt to taste).  Lower heat to achieve a very slow boil.

Add - 1 large onion diced.
        6 Cloves or 1.5 Tbsp. chopped garlic
        1 Tsp. dried Basil  or roughly a handful of fresh
           Basil
        1 Tbsp. Red Pepper - optional
        1/4 cup lemon juice + zest from peels

Add Squirrels and just enough water to cover them - cover and slow boil (key is slow) for approx. 2 hours.  (Squirrel meat is tough and - this tenderizes/gently flavors the meat).  Check periodically and replenish water to maintain a constant level.

Remove squirrels, discard water.

Using the same pan

Sweat a small onion, 1/2 to 1 Tbsp. garlic (basically to your taste) and 8oz pack of mushrooms using 1/4 cup beer and 1 Tbsp. butter.  When tender - add 3 or 4 Tbsp. Extra Virgin Olive Oil and 1/2 stick butter.

Salt and Pepper Squirrel pieces to taste.  Increase to medium/high heat and lightly brown the Squirrel pieces.

Reduce heat to low and add.

1 cup milk
2 cups chicken stock
salt & pepper to taste
1 Tsp Basil
1/8 Tsp red pepper (optional)

Add Squirrels and gently (key is gently) simmer for 20 - 30 min. remove squirrels from pan and set aside.

Over high heat, reduce liquid by half
make a rue - 1 heaping Tbsp flour, 1/2 stick butter - salt & pepper to taste.  

Allow rue to cook out for 3-4 min.  then add 1/8 tsp lemon juice and slowly add to reduced liquid until thickened over low heat.

Pour sauce over Squirrel pieces and serve.

Mary Ann and Wanda were the best of friends all through their high school days.
Both members of the kennel club both active in the S.P.C.A.
After graduation Mary Ann went out west to be a cover girl

Well, it wasn't two weeks after she moved in, Wanda started gettin' abused.
She served cocktail nuts and planters classics,
But those squirrels just weren't amused.
Well, she finally got the nerve to look in the tree, a stately Oak growing there.
But a squirrel ran down that Oak tree limb and put her in intensive care.

Right away Mary Ann flew in from Atlanta on a red-eye midnight flight.
She held Wanda's hand, as they worked out a plan and it didn't take 'em long to decide,
Those squirrels had to die.
Goodbye...Squirrels.

And it turns out there are thousands of squirrels
The girls can't kill 'em all.
So the girls bought some land and a roadside stand down on highway 59.
They sell squirrel ham and sautéed squirrel jam and they don't lose any sleep at night.
Cause... the squirrels had to die.
Goodbye squirrels
For goodness sakes!
Let's go out to the park squirrels, we'll pack a lunch.
And bring lots of nuts...
