What is yours? I'm looking for some inspiration. Been stuck inside for over a week now and starting to go loopy, but I'm just feeling well enough to cook something up.

So, any suggestions?

Mine is a bean and cheese burrito with a ton of hot sauce. But I get it at a taco shop, I don't make it myself.

Barbs spaghetti and meat balls. She's Sicilian and its her Grandmas recipe ;)

I've never had meatloaf! I always imagine it's a bit like Spam though. I'm not a big spam/corned beef fan.

My gran used to make a dish called head cheese when I was a kid. It's a Polish recipe made from pigs head.  :-/ My parents used to tell me it was polish meatloaf. Maybe that's why I've never tried normal meatloaf!!

Oven baked chicken leg quarters with mashed potatoes, gravy, pull apart rolls, corn & apple pie for dessert. :)


BTW, my hubby, his brothers, uncles and cousins LOVE head cheese!  His cousin makes it really good (according to him, lol).

Meatloaf = Spam. What a horrible image!

Em, it's 2/3 lb. ground beef, 1/3 lb. ground pork, and handful of either breadcrumbs or oatmeal, an egg, ketchup, brown mustard, some onion, garlic, worcestershire sauce, and probably a few things I'm forgetting. Mix, shape into a loaf, put it in a bread pan, and roast it until it's done (about an hour). Use the dripping for gravy.

Emily, meatloaf, as made here, is ground round......kinda like a giant hamburger patty...with filler and seasoning and goes perfectly with mashed potatoes and spinach! Gil's fave comfort food, actually......unless it's sharp cheddar cheese macaroni, nice and creamy inside,with a big ole cheese crust on top.

Oh, and mushrooms make me smile, or(with a big dill pickle on the side) a turkey sammich from The Trident in Sausalito, CA, and, of course, cheesecake..did ya know cheesecake is like green m&m's-they make you.err.... amorous!!! Or, so I'm told......I wouldn't know firsthand.......... :o :o

Believe it or not, Dad makes spicy hashbrowns that are to die (or get stabbed by a fork which has happened at my house) for. Cubed potatos cooked in butter or olive oil with onion, crushed red pepper, garlic, italian seasoning, salt, pepper, and Becky likes mushrooms in her's(yuck [smiley=hurl.gif]). They are the BEST with a little ketchup on top. Just makes sure you like hot things or have a glass of milk with them though because they will make you sweat a little. Speaking of those yummy delights, Dad's making up a batch right now. Where's my fork? ;D

Emily, Marks and Sparks do quite a good meat loaf, but king of kings dinner has to be a good roast dinner with all the trimmings, it does not matter what meat you use you must have yorkshire Puds, stuffing  at least two types of roasted veg  and a varity of steamed veg, roast pototoes pre boiled, shaken in a little semolina then roasted till crisp and crunky and lashings of thick gravey.

Lately my comfort foods have been chocolate chips right out of the bag and fresh bell peppers dipped in sour cream.

I'm tired of crying from abstaining from smoking so instead I fill my face. :-[

last time i was up in sandpoint idaho i made my cousin and his ole lady a meatloaf. man do i love meatloaf :-* he has since acquired some butcher equipment. next time i get up there we're going to try deer or elk meat. i don't know how that would work since deer and elk is so lean but we'll see what happens. mom used to make a salmon loaf that was pretty kick ass. might try that one too.

Here's the secret: Two-thirds venison or elk, one-third ground pork.

And Carolyn, oh--my--God - chicken and dumplings. That one's right up toward the top of the list.

Lay uncooked bacon over the top of the elk/deer meatloaf and as it cooks and the fat will drip down through and keep it moist.  We used to do that with Wood duck breast fillets and they tasted just like a tenderloin on the grill!

Brew has been waxing poetic about my meatloaf again, I see.  What is it with meatloaf?  My 85 year old Auntie begs me to make meatloaf when I invite her over for dinner. I think of meatloaf as a last resort, I-can't-think-of-anything-else-to-make kind of meal.

Comfort food for me is corn on the cob with gallons of butter or homemade ice cream with fruit from the garden.

Real mashed potatoes naturally have lumps, so I thought it went without saying. They're even good with the skins left on.

And you can have whatever vegetable you like, Chuck. I like those, too. But the topic is "favourite" comfort food, and mine is green beans.

There are still a few great things about this country, and that's one of 'em - you get to pick your own vegetable.

My Nanno's rissott. She never called it rissotto (northern Italian, pasta? what's that?)...slow simmered rice in judiciously added amounts of chicken broth until absorbed in stages (LONG process), onions, garlic, parmesean cheese at the end...my brother and I never pause a second when asked our FAVORITE food.

Did a chicken caccitore that would nearly make us cry with delight too.
Different generation, that, she used to tell me, with a twinkle in her eye, "I LOVE to watch a man eat..."

I'm with Cathi. I love homemade (no boxes or frozen please) macaroni and cheese with a nice golden crust. Also at another time Cheesecake of any kind! Plain, with chocolate, with fruit, any kind!!

I like grated cheese in my tomato soup, so it all melts and is gooey. Mmmm... My OH thinks I'm mad that I like grilled cheese. People here don't eat a lot of what Brew calls 'American Cheese'. So I make his with real cheese instead.

Mummymac - I love a good roast dinner - that's what I'm having for my wedding breakfast! Roast beef, yorkshires and all the trimmings. It's quite hard work just for one though.  :)

I LOVE this thread! Great way to build appetite before dinner, heh heh... ;)

Anyways, my fave comfort foods:
macaroni & cheese (made by me),
cheese rolls (made by me),
tuna pizza (one supermarket chain makes one to kill for!), mashed potatos (I loved one of those add-water kinds back in UK, in here made by Timo)
fibre porridge (made by me; it contains lots of fibres, apricots/plums and tastes heavenly)

We found the ultimate comfort food today.

We attended the Wisconsin State Fair today and ate our way from one end of the grounds to the other (then came home and had a nap!).

The best?  Deep fried macaroni and cheese on a stick!!

They also offer deep fried Snickers on a stick and deep fried oreos.  We had both in previous years, but not today.

Oh my heart!! I wonder how many fat grams and cholestrol is in it?? I saw deep fried twinkies on a food network. That's probably equally tasty and unhealthy.

Unhealthy is all in how one looks it, I think.

I spent a wonderful day with my family, had an enjoyable time seeing and sampling new and interesting things, reveling in perfect (if rather hot) weather, and returned dog tired.

I don't see this as a dress rehearsal.  This is the only life I get and I'm gonna enjoy it.  Worrying about what a few bites of deep fried mac and cheese will do to my heart is low on my priority list.

I love this philosophy. My mother is trying to guilt trip me into losing weight for my wedding and to fit in a dress. Ok, so I'm only 5'2" and I do weigh about 136lbs, but that's not THAT bad is it? I'm gonna throw this one at her next time she tries to make me feel bad about eating what I want!

Once in a while, I will pile mashed potatoes on top of the meat loaf about 1/2 hour before it's done, shmear gobs of butter on top and around the sides of the potatoes and let them brown to a golden color....yummy.  Just slice and serve.

One of my favorite comfort foods is a tomato sandwich with mayo and a little onion........or pasta, with onions and plenty of garlic sauteed (sp) in olive oil.  I splash a little vinegar over the top.

I can imagine it now: my relatives wondering why I'm getting all excited about mashed potatoes... ;D

What is it about moms and daughter's weight?! ::) Mine used to bug me about my weight for years, although she has carried extra with her my whole life... And now when I'm thin, that isn't fine either... Oh the middle ground... ;D

it looks like that our moms have lots of things in common! But luckily mom has calmed down since she retired, which means no more daily email/call/chat, just two, three per week... On the worst moments I say a little prayer to thank that for the time being there are 280 kms between us... ;)

And yeah, funny, but I like smashed potatoes and french fries, but when someone puts regular potatoes in front of me, I feel that something is missing...  Finnish school food (well in my childhood that was) 9 times out of 10: potatoes with gravy; I think I ate my lifetime supply of normal, boiled potatoes then... ;D
