Title: Coffee? Post by ClusterChuck on Oct 30th, 2008 at 6:27pm
I have been in discussions with certain fellow clusterheads about coffee. Now I have a question.
Batch bakes his own coffee beans, and from personally tasting his coffee, on several occasions, I feel it is the finest coffee around. It is part the beans he uses, and part the freshly baked flavor. In response to this, in an email I recieved from a FEMALE clusterhead, she made the statement: Quote:
My question is, do you wimminz actually think INSTANT, is coffee? MY GOD!!! It is just BADLY flavored, colored water! <shudder at the thought of drinking it> For those that drink REAL coffee, what is your favorite coffee? Chuck |

Since at the moment I can't afford my favorite... ::)
I buy Aldi's brand and re-grind it to get a fuller flavor when I make it. Otherwise my favorite is the dark gourmet roast from Folgers. I regrind that too to make it richer. I like my coffee strong enough to defend itself. |

OK, I'm not a woman, but I know coffee... I've owned 3 coffee shops (perhaps Marc or Bob P has been into Higher Groundz), and I have more coffee equipment than anyone I have ever met. I used to drink about 8-10 double shots per day, but now I am down to 1 or 2 at most.
I could be called a coffee snob. Almost all of my coffee is from Boca Java, which ships beans roasted to order so they're always quite fresh. I could write a book on the proper way to make the perfect brew, and I practice what I preach. I can turn coffee haters into coffee lovers because most coffee haters have never had good coffee. Here's the thing... instant coffee tastes great. They brew it perfectly, then they reduce it to those instant grounds, and it just tastes like coffee *should* taste. Anyone who tells me they hate instant, I would bet $1000 I could serve them a cup of both in a blind taste test and they would pick the instant as better tasting at least 1/2 of the time. It's MUCH harder to get the right flavor brewing it on your own, but you have a much wider spectrum of flavor possibilities. Plus, there is no such thing as instant espresso. You can't fake the creme which holds 90% of the flavor after a proper extraction. So, I like both. |

If it's true, Fu, what is the best instant? [smiley=confused.gif]
|
Title: Re: Coffee? Post by Linda_Howell on Oct 30th, 2008 at 7:07pm "Seattles Best" hands down. "Tullys" is a close second. and I cannot imagine anyone ingesting instant coffee. Yuck. Linda, a coffee snob. |
Title: Re: Coffee? Post by Melissa on Oct 30th, 2008 at 7:19pm
I buy the 8 o'clock decaf coffee and grind the beans myself. BUT, if I want a quickie coffee, I'll use the Folgers singles that you can nuke.

Easy, Folger's You have to understand, coffee shops would serve an instant coffee if they could, it's just not economical. It costs pennies to brew a cup from beans. It costs a lot more to use instant. As an experiment, I put a pot of Folger's in the coffee shop one week as a 'special' coffee. I told nobody it was instant. I went through a industrial sized tub of it (Costco) in that week, and the customer RAVED about it. Most of those people were 'coffee snobs'. I gave the coffee out for free (only in taster sized cups, the size of a dixie cup) Some of these people were really pissed off that it was instant. The truth hurts... the ones who reacted badly were the ones who liked it the most. Their preconcieved notions that instant was bad coffee were proven false, and nobody likes to be proven wrong. After that, I even thought about running a weekly special on it and calling it some exotic name like 'Astronaut Coffee', but I didn't do it because the stuff is expensive. |
Title: Re: Coffee? Post by Charlie on Oct 30th, 2008 at 7:39pm
Good stuff Fu. Thanks.
Scandinavians and Italians are into coffee so long as you can stand up a fork in it. While I'm not into all this fancysmancy stuff, I need something other than hot brown water. I just add a little espresso to my Folgers Gourmet. I works. I bet even Svenn would like it. Charlie |
Title: Re: Coffee? Post by KJ on Oct 30th, 2008 at 7:45pm
Thank you...I have a small jar of Folgers in my fridge.
I used to be a major coffee drinker.....a pot a day, ground my own beans, the whole catastrophe. Now I like tea. When I drink coffee at home, it's Folgers instant. 8-) |

It never keeps me me awake, just makes me queezy if I have too much. Getting old........ |

Well Chuckles, I like my coffee like I like my Wimminz.............
Strong, cold and bitter! ;D Actually before I began to brew real coffee, when I was younger I used to run the hot water tap, put a tsp of instant coffee in the cup and put it under the fawcet. Now THAT is instant coffee! :o I don't have the $ for the high end stuff but Chase & Sanborn special roast is pretty good. It has a full flavor and isn't harsh or bitter. And no, I was kidding about my Wimminz ;) -P. |

Instant? Give me shoe leather, steeped in pond water!! Noo wayy! Coffee should NOT have foam on top, unless it's from steamed cream!
It used to be Yuban for us, then Gevalia... now it's Folger's Gourmet roast...and I'm stickin! Yuban left a queasiness I prefer to avoid. Don't bother me with Starbucks or Dutch Bros or anyone else in a kiosk......I prefer to stumble into my kitchen and pour a big mug of freshly HOME brewed coffee........ or, how bout Rum n pineapple juice??? Makes my eyes twinkle!! Cathi :D |

As a former Canadian who lives in the south with his Middle Tennessee born wife, I have some thoughts on coffee too !! :)
I was a devoted fan of Timmies (Tim Hortons) when I lived and farmed in the great white north....my little town had three (3!) Timmies franchises..... but since moving here several years ago I've gotten kind of passionate about the "Bean Street Coffee Company" brew served at Kangaroo gas stations all over the mid south !! |
Title: Re: Coffee? Post by Callico on Oct 30th, 2008 at 11:20pm
I prefer my own make, usually Folgers, but when I can find it and afford it I do like to grind my own Eight O'Clock coffee. Forget all about Starbucks!
However, after having ruined my taste buds with truck stop coffee I can drink about any except decaf! I agree with Marc about instant IF it is made correctly. Most of the time it is made with tepid water and mixed wrong. then it is worse than none at all. I like it hot and FRESH, not sitting in the pot for a couple of hours. Jerry BTW, if you are on the road and want a good cup, find a Love's or Pilot truck stop. They have the best truck stop coffee in my opinion. edit to add: forget iced! The only thing worse than cold coffee (or lukewarm) is wet toilet paper! :D |

Gotta agree about the Pilot and Loves !! LOL !!
Starbucks is to coffee what toilet paper is to an elephant, and it's EXPENSIVE (as well as a long drive) around these parts, too !! And iced coffee is like warm sweet tea.....it's just WRONG ! |

I have cut my coffee consumption down quite a bit, and I no longer drink esspresso at all. I like to drink a dark coffee, such as French Roast, Sumatra or Sidamo, ground to espresso and used in my drip pot.
Nowadays I do half french roast and half flavored light shit like vanilla or hazelnut. I can't do caffeine like i used to. It's a crying shame. I like the way you think, Shawn. I would have thoroughly enjoyed talking with each customer about the depth and complexity of the instant coffee imported from LaToilet, France. That would be fun. |
Title: Re: Coffee? Post by George_J on Oct 31st, 2008 at 12:15am
We generally compromise on Sumatran. I like the Ethiopian coffees I've tried, and am very fond of medium-roast beans from Costa Rica. Had Jamaican Blue Mountain once, and of course it was wonderful. But who can afford it, eh?
If EJ had her way, we'd drink nothing but incinerated french roast. I'll drink french roast, but I find it's very similar in flavor to charcoal briquets. Hence the uneasy Sumatran compromise. I do Pete's roasting thing when I can, but I haven't found a good source of raw beans, locally. I suppose I could get them over the internet, but--when we're out of coffee--it's a damned emergency around here. EJ loves her coffee. Saddest thing I ever saw in my life was when she was pregnant (lo these many years ago). She lost her taste for coffee. She'd pour herself a cup in the morning, and just sit and look at it. Best, George |
Title: Re: Coffee? Post by Linda_Howell on Oct 31st, 2008 at 12:18am Actually...I find this whole subject fasinating as to the depth and passion we all feel about coffee. You are missing out on one of natures wonders...no matter how it is brewed, pressed, steeped, or pored over hot water. |

You're all wrong..... You just haven't had a cup of coffee till you're sitting in the French Quarter in New Orleans and have one of those "little" cups of whatever they serve there with the little square donuts (binequets or whatever they call them). NOW THAT'S COFFEE.
Unfortunatly I don't live in NO and don't get there too often so I just dream of that wonderful stuff (have tried to recreate it but it just doesn't work for me). So I just buy Folgers and have instant at night (two teaspoons). But then again, I'll drink coffee about anytime, any place - I'm just not much of a conosouier (can't even spell that word). Definitely NOT a snob about it. Long as it's got CAFFEINE - I can form an instant bond with it. :) Hugs BD PS Got me one of those cappacino machines - One of these days I'm gonna get it out of the box and read the directions and see how it works. Love that stuff, but that thing looks complicated. :) |

Most good full-service hotels have at least one coffe jockey on staff who makes sure their coffee production is outstanding. They calibrate their grind at least 4 to 6 times per day, compensating for humidity and other factors. They calibrate their equipement for temperature within .1 of a degree. The coffee jockey is actually highly trained and carries a toolbox full of specialized instruments. You wouldn't believe the amount of work that goes into keeping the coffee good.
As a result, the coffee you get at these hotels is always exceptional. If you have a cup, you'll taste a proper cup of coffee. There is a lot of things to look for in a good cup. Aroma, temperature, taste (of course), mouth feel, after-taste. Hotel coffee always gets a 5 out of 5 for me. |

I love my coffee!!! The best I ever had was in Costa Rica. I went on a tour of a very primative coffee plantation (no electricity!) where all the coffee beans were hand picked, individually hulled by hand and roasted. The guy packing the beans used a candle to seal the plastic bag. It was very cool. The hills there are filled with coffee plants.
Jamacian coffee is also excellent! Occasionally, I'll go online and order some. It is not cheap, especially with shipping, so it is not something I get often. I buy wholebean and grind it up every morning. Seattles Best is good and after reading this thread, I'm gonna try some of the others that have been mentioned. :) Beth......don't even talk to me in the am until I've had my coffee! |

Title: Re: Coffee? Post by ClusterChuck on Oct 31st, 2008 at 2:16pm
OK, since I started this fascinating thread, I guess I should put in my odd, and quirky coffee tastes.
Batch's home roasted blends are my favorite. I am not sure which ones of his I have tried, as he has many different beans that he plays with. But for a freshly brewed cuppa, his is the best. BUT, for my normal, everyday coffee, I am fairly flexible, as long as it is PLAIN coffee! Don't give me that foo-foo flavored crap, like hazelnut, or any of the MANY abominations that are out there! Give me plain old coffee! BLACK!! Why ruin GREAT taste with flavoring, or cream, or sugar, or honey. BLEUACHHH!!! Now here is the part that blows most people's minds. I LOVE the coffee that has been sitting on the hot unit, simmering for HOURS!!! I wish I could make a pot in the morning, keep it on all day, and then drink it at night. But alas, I drink it before it gets REALLY good! <sigh> I just can't leave it there, smelling it, without drinking it. I also like my coffee STRONG! VERY strong! BUT, it is very difficult to get STRONG coffee without it getting bitter. Good coffee, in my mind, is the stuff, that if you WERE to stick a spoon in it, to stir it up, would disintegrate the spoon!!! YUMMY!!! 847 years ago, Dunkin' Donuts had a commercial proclaiming how fresh their products were. They would claim they make their donuts fresh every --- minutes (I forgot the time), and they would show their fresh, soft donuts, and then show the competition's donuts needing an air hammer to break it. Then they would state that they made their coffee fresh every --- minutes (again, I don't remember the time frame). They would show their coffee, as a nice smooth cup being poured. Then they would show the competition's coffee, pouring out like tar, in thick clumps. My kids would always yell out: "THAT is Daddy's coffee!" YUP! Now THAT is how I like mine! Chuck |

Title: Re: Coffee? Post by fubar on Oct 31st, 2008 at 2:32pm
Here is a list of my favorites, in no particular order:
Any good hotel coffee Jamaican Blue Mountain - really expensive but really, really good. Pure Kona - Also excellent if you can afford it. Peaberry Sumatra, Guatemala, Ethiopian If it is a good coffee and brewed correctly, I'll drink it black. If it isn't brewed right, I'll dress it up with a little heavy cream, maybe a pinch of sugar. Flavored coffee is made from lower quality beans, and the off-taste of the beans is too strong for me. I like a strong coffee flavor, that's while I only drink shots of espresso at home. I think Chuck would like my coffee. It's sad to me that a lot of people hate coffee because they've only ever tasted bad coffee. A great cup is a thing of beauty. |

Rolo.. :) |
Title: Re: Coffee? Post by fubar on Oct 31st, 2008 at 3:21pm
mmmmm Kona.... never had it hurt my stomach. Too bad... more for me. ;)
Another *excellent* coffee, in my opinion, is Illy. It's also not cheap, but they produce a consistent flavor that gets an A+. For espresso, it's hard to beat Illy. |

Instant coffee is usually made from robusta beans, which have a different flavor from the arabica beans - robusta are stronger, less complex. Freeze-drying pulls off some of the aromatic oils. I think instant coffee is generally inferior, although the stuff on the airplanes is not too bad.

Title: Re: Coffee? Post by fubar on Oct 31st, 2008 at 4:43pm
Maybe it's just me, but I enjoy every cup as much as the first.
One of my coffee home coffee machines (a Jura S9) actually keeps track of how many shots I have made. In the 2 years that I have owned it, using it only when I'm home (I travel 40% of the time at least) I have made over 2500 double shots. Even if you average that out like I was home every day, that's 6.8 double shots per day. I probably drink too much coffee. That might be why I ended up in the hospital last month with a heart problem... since then, I've cut back to 2 shots a day and everything iseems fine. I went through the whole 'no coffee, no chocolate, no nothing' routine with each one of my neurologists. Apart from missing my cuppa, it didn't affect me. I didn't even get the famous 'cofee headache' most people get when trying to quit. |

If I have any leftover coffee still in the pot when I get home, I'll put it in a glass with crushed ice, 1/2 & 1/2, splenda, shake it up and drink. YUM!
My very favorite restaurant in town (Rusty's) had the BEST coffee. I do not remember what kind it was, but it was delicious! One night I was there and ordered a cup after dinner and noticed it was NOT the same. When I asked about it, I was told that they discontinued their coffee service due to the high cost. I was heartbroken, seriously, it was that good. Within six months they closed thier doors (after 40+ years in business). I'm still not over it. :( |

I shall leave it as a product of your imagination what coffee on a Crab Fishing Boat can be like. You will be awake.
While at home, I like Sumatrin. Usually done in either a Vacumn pot or a coffee press. Generally I make it strong enough to come out about 200 Mg of caffeine per cup. Any stronger than that and it becomes bitter. Sort of like too much Squid ink or fish gure in the coffee. [smiley=smokin.gif] |

The poor waitress about wore her shoes out bringing me reifills! I tried to buy some of it when we left, but they would not sell any of it other than what they served, not even to carry out!
If you are in the Chicago area, Papanicholas has an excellent Kona. Don't get it often as it is pricey. Tim Hortons is great! Gonna go make a fresh pot now. Jerry |
