Roast Turkey Stuffing (Stove-Top, lol) Green Bean Casserole Carrots w/butter & brown sugar (I don't like beans) Mashed Potatoes Gravy Cranberry Sauce (jellied) Pickles Green Olives Dinner Rolls Pumpkin Pie Sweet Potato Pie Cool Whip I think that's it. |

Well, we go down to my sister-in-law's for Thanksgiving and Christmas, so we split the cooking. Here's what I"ll be making and carrying
Cornbread dressing-(Mel, if you want an easy recipe for dressing, just let me know). I took over the dressing from my Grandmother years ago. Fried turkey Giblet gravy Rolls Spice chiffon cake Sister-in-law is baking the ham, making deviled eggs, butterbeans, candied yams and I don't know what else. Then niece-in-laws' will be contributing their fair share. Don't even know how may people will be there! |

Well, nothing will be on MY table. It will be whatever the restaurant might have on their menu.
This year will be the first time in the 40 years of our marriage, (43 years of being together), that Tarey and I will be completely alone on Thanksgiving day. Amanda, her Jason and baby Delia can't come home for Christmas (Jason is working that weekend), so originally we thought about going to Christine's for Thanksgiving, and spending Christmas with Amanda, but we decided there was NO WAY we were not going to be with both of our granddaughters at some point over Christmas - just won't work. So, Tarey and I decided to do the travel loop at Christmas, visiting both daughters and our babies and sharing our favorite holiday with everyone. It actually works out well, because once we made this decision, guess what. Amanda brought Delia up here this weekend, and Christine brought Maegan up here this weekend. We just spend a wonderful weekend with our daughters and granddaughters. Last night was Thanksgiving for us. We had baked ham, AuGratin potatoes, Swiss corn casserole, Mandarin Orange salad, pumpkin and apple pie. Yesterday was MY Thanksgiving. Wishing all of you a Happy Thanksgiving, just like mine was. 1. Brined, roast turkey (brining mix includes sea salt, sugar, garlic, mustard seed, rosemary, black and white peppercorns, sage, and lemon and orange peel.) Turkey will have wedges of orange and lemon inside, and an onion. I don't put stuffing inside the turkey anymore.
2. Fresh cranberries. 3. Wild rice and brown rice stuffing with toasted, sliced almonds and dried cranberries. 4. EJ's family recipe bread stuffing. Has herbs, boiled eggs, hot Italian sausage, and celery in it. (Don't remember what else--she and her sisters have a "dressing party" every year where they make it and imbibe mass quantities of martinis. My job is to serve as a martini taster.) 5. Mashed potatoes and turkey gravy. I use fresh rosemary leaves in the gravy. 6. Couple different vegetables. 7. Acorn squash. 8. Yams. I'm not a big fan, but others like them. 9. Hot apple crisp with whipped cream. 10. Pumpkin pies. Ellen makes these. 11. El tells me she's going to make some fudge. I really enjoy Thanksgiving... I get to spend most of the day cooking with my daughter. She's great company. :) Best wishes for a happy Thanksgiving, all. George |

I finished (finally) my shopping for Thanksgiving last night.
On the menu Roast Turkey Mashed Potatoes and Gravy Sweet Potato Casserole Stuffing Broccoli and Cauliflower Dinner Rolls Cranberry Sauce Pumpkin Pie and whatever else my sis brings for dessert Since we eat later in the afternoon, I also make apps... I'm not cooking again this year. My daughter Dana will do the honors. It always scares me a bit, since she is vegan, but she borrowed my roaster and PROMISES not to make tofurkey... I'll toe-KICK her right into the next century if she does! Our menu is very similar to Melly's with the addition of a family traditional emerald salad... a jello concoction from my Grandmother's heyday. I don't care for pumpkin or yams, nor am I fond of cranberries, but I am totally jonesin for turkey!!! Dessert will be pumpkin sheesecake and a dutch apple pie! Some here may remember One-Eye Blind, aka Nancy..she's working in a grocery store and commented today on how many people buy everything pretty much already prepared.....canned gravy? Instant mashed potatoes?? OH PUHLEEZ! Make it real! Unbutton the jeans, sit back and enjoy the feast! Happy, PF Day to all......... Cathi |

With one exception..I have learned to make the mountains of mashed potatoes the day before, while my mixer is out. Put them in a microwaveable bowl after smushing em nice and smooth, and they're ready for the big day, without the mess of mixer! I also do my whipped cream today, as I am doing the rolls and the pie.....then, only thing on Turkey Morning is cutting chopping & gravying! As it stands, we might miss all the festivities this year. Gil has a nasty virus and I am not sure I want him in public tomorrow. Fortunately I know Dana doesn't believe in a lot of leftovers so I am prepping the basics...and we'll spend Turkey day in bed till the bird's done..actually, it's sounding quite nice to me as I type it! Mashed Sweet potatoes with brown sugar and pecan 'crust' Candied Yams (have to make both for the picky eaters *sigh*) Peaches & Cream Corn (the white & yellow kernel kind) Corn Souffle Sugar Snap Peas Carrots & Parsnips in a honey glaze Jeweled Cranberry Salad - cranberry juice jelly with slivered almonds, blueberries and grapes etc.) Pumpkin pie for the traditionalists Cherry Pie Pumpkin chiffon tarts in filo pastry shells Grasshopper Pie w Oreo cookie crust Pickles (homemade crunchy garlic dills - this recipe is to die for) Pickled beets (home made) Olives, bread and butter pickles Rolls & Butter Pumpkin bread Deviled Eggs Veggie Tray Fruit Tray (with cream cheese and chocolate dip) A Riesling, a Merlot, a White Zinfandel and sparkling grape juice for those that don't drink alckiehol. Geez, trying to type this damn list up since this morning, and between 10 a.m. and now it's changed 5 times and had multiple items added. This is what I get for letting Andrea help with prepping and cooking the meal - something tells me that a 15 y/o doesn't quite fully understand the amount of work involved in a meal such as the above; and trying to explain to her the concept of preparing that amount of food for a whole FIVE people - umm let's just say I lost that argument - ah well, we'll have enough food for the rest of the week and weekend! I'm a little bit ahead of the holiday, but here's a recipe for those turkey sandwich leftovers on Friday (or even Thursday night!)
Cranberry pecan mayonnaise for leftovers: Mayo (your choice but I use Hellman's), honey, dijon mustard (your choice of flavor), either jellied cranberry sauce or whole berry (doesn't matter), and toasted pecan pieces. Mix mayo, honey, mustard and cran sauce together in the proportions you like (should be slightly sweet with a hint of the mustard flavor). Fold in pecans, spread on bread, slap on turkey and cheese, or lettuce, and munch away! |

We're having 14 here for dinner or dessert, depending on what time they show up. Food's at 4, if they're late, they get leftovers!
Turkey Sausage dressing (I too cook outside of the turkey) Mashed potato casserole (with cream cheese) Twice-baked sweet potatoes Green bean casserole (My friend is bringing) Salad (my sister is bringing) French bread from the best bakery Still debating on apple-cranberry dessert. Spicy Chiffon Cake
2 cps. sifted flour 1 1/2 cp. sugar 3 tsp. baking powder 1 tsp. salt 1 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1/2 tsp ground allspice 1/2 tsp. ground cloves 1/2 cup cooking oil 7 eggs separated (bring the eggs to room temp. before using) 3/4 cup cold water 1/2 tsp cream of tartar Preheat oven to 325 F Sift together, flour, sugar baking powder, salt, cinnamon, nutmeg, allspice and cloves into bowl. Make a well in the center. Add oil, egg yolks, and water. Beat with an electric mixer at low speed for 1 minute, (Or by hand until smooth). Beat egg whites and cream of tartar in another bowl until stiff peaks form, using electric mixer at high speed. (This is why you bring your eggs to room temp, the whites will form up easier). Gradually pour the egg yolk mixture over the whites, gently folding just until blended (I recommend using about a 2 " wide rubber spatula). Pour into ungreased 10 inch tube pan. Pull metal spatula through the batter once to break large air bubbles. Bake in 325 oven for 55 minutes, then increase the heat to 350 F and bake 10-15 minutes more, until top springs back when touched lightly with finger. Invert tube pan on funnel or bottle to cool. When completely cooled, remove from pan. Frost with 7 minute frosting or seafoam frosting. It's a moist enough cake that you really don't need to frost it. For anybody who really likes to bake, try to find the 1979 edition of Farm Journals Home Baking Book. You can't buy them new. I have two now, the first being in deplorable condition where it's been used so much. I found the second one on the internet from a used book seller. |

Well, many of the "rest of my kids" will be around Saturday, so I'll be cooking twice. I have to work Friday, but will send Dyl to the store Friday on my behalf.
Saturday's Thanksgiving dinner with the "rest of my kids" will be... 3 whole roasted Chickens with Rosemary Garlic baste cranberry/cornbread/pecan dressing green bean almondien carrot coins/honey/butter garlic mashed taters and gravy pumpkin cake with cinnamon crumble and icing. I'm sure glad there is going to be a brood here to do the dishes...lol. |

Erm, well ya see Linda.... LOL Peaches and Cream corn is whole kernel corn from the Peaches and Cream corn on the cob kind... It has white and yellow kernels and is super sweet. As for the number of people here for dinner, well let's see, there was me, Clark, Ayden, Andrea and her boyfriend Robert, and umm Alex, who has a super massive black hole in the center of his stomach - at least we theorize he must have, since the amount of food the boy can put away is inhuman! So, umm, yup, 6 total for dinner. The menu was as extensive as it was for 2 reasons; 1. Andrea was having a go at her first time cooking (or helping cook really) a holiday meal. 2. We have a house full of picky eaters, but mostly because I am simply incapable of cooking a holiday meal in small amounts; I grew up being told repeatedly that no one would ever go hungry at our table. Dad was of the mind that if you had 10 people for dinner, then each dish should be able to feed 10 people, as in, if there was no other food available, 10 people would walk away from the table completely full from just one dish - so each dish is done in a way that it can feed an army :-/ I was able to convince Andrea that she needed to pare down her menu, and we eliminated all but 3 desserts, a pumpkin pie, a cherry custard pie, and a caramel apple deep dish pie. She is going to make the creamy pumpkin pie and the pumpkin chiffon tarts today....oy. So we ended up with brown sugar and maple glazed ham (an 8lb ham) mashed potatoes and gravy a large dish of cornbread stuffing sweet potato pie with brown sugar and pecan crust candied yams corn souffle peaches and cream corn sugar snap peas veggie tray fruit tray jeweled cranberry shimmer (jell-o mold with grapes, blueberries, raspberries, almond slivers and a ring of strawberries on top) plain rolls and honey butter flaky rolls sweet petite pickles, dill pickles and olives vanilla ice cream peppermint ice cream whipped cream for the pumpkin pie mini quiches Andrea is going to make the pumpkin chiffon tarts, creamy pumpkin pie (it's like a cheesecake almost), deviled eggs and long grain and wild rice today to go with the left overs, and there are LOTS of leftovers!! Oh, and the corn souffle she made is absolutely to-die-for!! So yeah, I easily had enough food prepared to feed 25 people or more, and there are enough groceries to make more food to feed an additional 25 people with the left overs and the items she is making today. I have to say though, it was utterly comical watching her learn to prepare a holiday meal, an trying to coordinate everything so it was all ready at the same time and the hot food stayed hot and the cold items stayed cold!! *sigh* my little baby girl is growing up....hard to believe she'll be 16 in just over a month. I can tell you right now that THAT is going to be what I eat on boxing Day this year, and the day after that, and the day after that, and the day after that... hmm.. best be tellin' Paul we need one BIIIG turkey! Up to now my favorite "leftover" sammich has been either turkey, stuffing and cranberry sauce or roast beef with horseradish and a ton of fresh spinach. They're going to take some beating but I think this might just do it.. (although roast pork stuffing and apple sauce deserves an honorable mention too) |
