What is yours? I'm looking for some inspiration. Been stuck inside for over a week now and starting to go loopy, but I'm just feeling well enough to cook something up.

So, any suggestions?

Mine is a bean and cheese burrito with a ton of hot sauce. But I get it at a taco shop, I don't make it myself.

I've never had meatloaf! I always imagine it's a bit like Spam though. I'm not a big spam/corned beef fan.

My gran used to make a dish called head cheese when I was a kid. It's a Polish recipe made from pigs head.  Undecided My parents used to tell me it was polish meatloaf. Maybe that's why I've never tried normal meatloaf!!

Oven baked chicken leg quarters with mashed potatoes, gravy, pull apart rolls, corn & apple pie for dessert. Smiley


BTW, my hubby, his brothers, uncles and cousins LOVE head cheese!  His cousin makes it really good (according to him, lol).

Meatloaf = Spam. What a horrible image!

Em, it's 2/3 lb. ground beef, 1/3 lb. ground pork, and handful of either breadcrumbs or oatmeal, an egg, ketchup, brown mustard, some onion, garlic, worcestershire sauce, and probably a few things I'm forgetting. Mix, shape into a loaf, put it in a bread pan, and roast it until it's done (about an hour). Use the dripping for gravy.

Emily, meatloaf, as made here, is ground round......kinda like a giant hamburger patty...with filler and seasoning and goes perfectly with mashed potatoes and spinach! Gil's fave comfort food, actually......unless it's sharp cheddar cheese macaroni, nice and creamy inside,with a big ole cheese crust on top.

Oh, and mushrooms make me smile, or(with a big dill pickle on the side) a turkey sammich from The Trident in Sausalito, CA, and, of course, cheesecake..did ya know cheesecake is like green m&m's-they make you.err.... amorous!!! Or, so I'm told......I wouldn't know firsthand.......... Shocked Shocked

Believe it or not, Dad makes spicy hashbrowns that are to die (or get stabbed by a fork which has happened at my house) for. Cubed potatos cooked in butter or olive oil with onion, crushed red pepper, garlic, italian seasoning, salt, pepper, and Becky likes mushrooms in her's(yuck Smiley). They are the BEST with a little ketchup on top. Just makes sure you like hot things or have a glass of milk with them though because they will make you sweat a little. Speaking of those yummy delights, Dad's making up a batch right now. Where's my fork? Grin

Emily, Marks and Sparks do quite a good meat loaf, but king of kings dinner has to be a good roast dinner with all the trimmings, it does not matter what meat you use you must have yorkshire Puds, stuffing  at least two types of roasted veg  and a varity of steamed veg, roast pototoes pre boiled, shaken in a little semolina then roasted till crisp and crunky and lashings of thick gravey.

or

Beans on toast with a fried egg on top, spread with loads of butter and marmite that is nearly as good as a roast
