Sunday night Dinner? Whatcha all have?

Angelhair pasta Alfredo with grilled Chicken.

Marinated some Chix breasts in balsamic vinegar, olive oil, garlic and italian seasonings all day before grilling them.

4-5 cloves pressed or fine chopped garlic sauteed in 2-3 Tbl. olive oil.
1 pint heavy cream
6 oz shredded parmasan cheese
pinch salt and white pepper
1/4 cup room temp real butter
3 Tbl fresh chopped flat leaf parsely.

Sautee the garlic till golden in the OO in large sautee pan. (don't use a teflon pan unless using a silicone whisk)
Turn heat to med high and pour in the cream and whisk till hot but not bubbling.
Turn heat down to just below a bubble, and whisk in the parmasan in 3rds till melted.  Add the pinch white pepper and taste for saltiness, and add salt as needed.

Take off the burner and whisk in the butter and the parsely.

Spoon over hot plated pasta with the grilled chicken sliced in bite size pieces.

Sprinkle more parmasan or asiago cheese as desired on top and serve!

I can feel my arteries harden as we speak, but the red wine should counter balance all the fats and colesterol I just consumed tonight!

Not sure what I am having yet.  I have to see what TV dinners are in the freezer.

Maybe I will treat myself, and go the extra mile, and order home delivered pizza ...

Swapped a computer backup for a home-cooked meal tonight and it was indeed an equitable trade! Only 6 more weekly clients to go and there'll be no more frozen entrees for me. booya

When I play on the weekend (which is most every weekend these days), I usually end up getting a meal or two mixed around. Tonight it was two eggs over easy, hash browns, extra crispy bacon, raisin toast, tomato juice, and coffee.

We had wonderful giant burritos at Pancheros.  I love it when I don't have to cook and it is even better when I get to go there.

Pegg, that sounds great except for one thing....crusty bread.   Grin


I BB'qed  some chicken thighs I had marinated in spices all day.

A huge amount of aparagus in lemon and mayo sauce with pepper that I steamed.

Tomato slices with basil and goat cheese under the broiler for a few seconds....and

Pears marinating in brown sugar all day.  With Vanilla Ice cream on top.


     If Jim expect this dinner every day this week he can keep on hoping...LOL   


Tomorrow he's getting chicken sandwiches.   Wink

Yes I had some texas toast I was going to make into garlic bread with toasted cheeseon it, and for dessert I WAS going to make mixed berry sauce over slices of angelfood cake with whipped cream, but time grew short on me with the chores we were doing today.

I'm getting old...I can't do it all anymore...I only got one of the 2 sets of windows cleaned today before my back gave out.

AUuuuggggghhhh    old age SUCKS!

I did Roast Leg of Lamb with Yorkshire puddings (Okay shoot me now but the kids insisted!) Mint Sauce and Onion Sauce, Green Beans, Chantenay Carrots glazed with maple syrup, parmesan and sesame seeds, Cauliflower, Roast Potatoes and New Potatoes and gravy followed by Pineapple upside down cake and custard.. will someone please tell me how I have lost weight after shovelling all that?!!

(Oh I had two jars of pickled beetroot, about a cup of banana peppers, some cheese, 2 chocolate ice cream bars, a pint of skimmed milk, 2 slices of toast with jam and butter and a couple of slices of pizza with peppers onions and mushrooms on it. Oh and a can of mushy peas with some more of the mint sauce on them too and two packets of crisps, aka chips to you guys)

Actually I'm sure I had even more than that but I don't want to ask my daughter in case she tells me! LOL

Sunday dinner was simply done: left-over vegetable nuggets from last night, side salad and corn.

But I did cook salmon-noodles-vegetable stir-fry today, will do carrot-cheese buns tomorrow and we still have enough of macaroni-chopped meat cassarole in the freezer to feed and army; that's left-overs from Wednesday.

Melissa I wade through a couple of jars a day on average and have been known to eat as many as 4 jars in a day - I absolutely love 'em LOL

You must be trying to keep up with Michael Phelp's training diet! He eats a ton too! I LLLOOOVVVEEEE Yorkshire pudding. Everytime I try to describe this to my husband he tells me how much he wouldn't like it. His Dad is 1st generation from England and his father was a chef. I can't believe he's never had it. My mom used to make it. I wish you could send it to me but it's just gotta be eaten hot out of the oven!

Not gonna mention my meatloaf recipe......well I just did....

I've been loading up for a few days. Not looking forward to my colonoscopy prep tomorrow. Buncha ghouls. Just what is it that gets into a doctor to specialize in this sort of thing? Not sure I would want one for a nextdoor neighbor....okay if he kept his blinds drawn, I suppose.....

Waiting to get back on line feels like a colonoscopy too. I'm told that the damn thing won't accept a new drive. It wouldn't when I and some geeks tried to do it at home. WTF kind of bug did the thing get? Yikes. Maybe I'll have an excuse to get something new....
