For us, I am going to attempt to make Eggplant Parmesan for the very first time.

I am going to slice some chicken breasts, sprinkle them with Tony Chacheres, and fry them in olive oil, served with green beans (or butter beans) and yeast rolls.

Having opened a beer, I will collect and mix -

Big heap of cheapest minced beef
About one third as much spiced sausage meat
Lashings of chopped onion, celery, tomato and peas
One quarter of 10% of a small baby carrot (diced and pureed)
A whisked egg, bread crumbs, salt, pepper and Worcestershire sauce

I'll shape it nicely, wrap it in Alfoil and fry it softly for 15 minutes each side, opening a new beer each turn.

Served with mountains of mashed spud, gravy, and perhaps a beer.


(PS If cooking for CHeads, you may want to cut back on the carrot.)

Kitchen was closed at my hotel so ate at the 99 in MA. Had a filet with broccoli and grilled tomatoes.

Brian, I have to 2nd the yummyness! 

Well, my meal didn't turn out like I wanted it to, but I have decided that I think I'll like eggplant and will be purchasing another to throw under the broiler after oiling and seasoning it.  I think it'll be good then! Smiley

Did it turn out soggy, Mel? I've never made it, but I've heard that the key to making eggplant is to slice it, salt it, and press all the excess moisture out for like two hours before you cook it.

No, it wasn't soggy, but I should have peeled it beforehand and purchased a much larger size.  Also, on one recipe it recommended broiling it first with some olive oil, salt & pepper, which probably would have made it more tasty and not as bland.

The family gets to rummage through the fridge for Easter leftovers.  I can't eat because I have an abcess tooth and the right side of my face is swollen like a chipmonk, only bigger.  Everyone is OMG!!! Shocked when they look at me.   I'm soooo hungry!! 

Mel, Eggplant Parmesan sounds yummy right now.

Feel Better Beth - I hope you're having it taken care of?

Foraging in the frig is on the menu tonight.  I have an early meeting, Brew's got errands and God knows when the kid gets home.  There's plenty of leftovers from Easter and the giant chicken I roasted on Saturday - no one will starve.
