Oh, stir the kangaroo stew...

I tell ya things is pretty crook,

Since dad got put in jail.


And so goes an old Australian ballad, but the northern spring is approaching so surely barbecues are being cleaned, timber gathered, and plans made for the bestest gatherings on legs.

I've seen so many pictures of American barbeques that put my own paltry attempts to shame, but I'm only too happy to learn. Especially if it involves teaching with pictures and I promise never to admit licking the screen as you put up your photos and recipes.

To think that people write songs about barbeque sauce and every state and township has its own guaranteed recipe!

(Clothes might maketh the man, but sauces maketh the meal.)

A picture is worth a thousand words,  but barbeques rule so let the cooking begin!



(and an extra beer for the cook.)

Actually Barbara, barbeque was started not invented in Vegas. It was invented at a creek source known as The Meadows, later named Las Vegas. It was taken to Texas by two Mexican rustlers back in 1856. The Mexican rustlers, San and Tony, had stopped at the spring at The Meadows to water their stolen buffalo  and chickens and met Nevada Bobby. Bobby had a secret sauce with a hellava kick. In exchange for some chickens and one of the buffalo's hind legs Bobby traded his secret with San and Tony and they moved on toward Texas driving their herd of chickens and a 3-legged buffalo ahead of them. San and Tony finally reached a river in Texas hill country and decided to make some money from Nevada Bobby's chicken/buffalo sauce. They set up a cantina called San Antonyio's Buffalo Hot Wings next to Dirty Dick's burger joint.
You probably thought Buffalo Hot Wings was a new place from Buffalo, New York. Not so, it invented by Nevada Bobby in Las Vegas.

Aussie, what you need is something like this.  A built-in pit, with a walk-in cooler, like I have in my garage... Any educated person knows that BBQ was invented in Alabama, although my Texas Bride agrees with Barbara...  Wink
