Hi Jen,
Lactose intolerance is the inability to digest lactose (=milk sugar) do to the lack of the enzyme needed to degrade it. All children have this enzyme (how else could they be fed on milk) but some people loose it on growing up: almost all east Asians, only a few of European origin. In making cheese and butter, the lactose is left behind. In making yogurt the lactose is degraded by bacteria. Therefore, only milk and cream, and food prepared with them should be avoided by people with lactose intolerance. Maybe Bryan is avoiding some foods that he could tolerate?
