Riccardo-
I am both 1/2 Italian and a fair cook. Several comments-
1-"Vero parmigiano" imported from Italy IS available in the US, but hard to find outside larger cities.
2-Most US made parmigiano is 'non commestible' (inedible), though there are a few brands avaiable that are not too bad.
3-The biggest sin is the packaged ground Parmesan. Ground cardboard in a cardboard container, in my opinion. This stuff is the most likely to have MSG added, although compared to freshly ground parmigiano reggiano, it's still flavorless.
4-I too consume far more parmigiano than the average US'r, closer to that of of Italy, I suspect, and have never had any CH effect from it.
