Because, while it is true that it occurs in middle-aged men, they are quoting from pretty old literature for a headache clinic since the implication is that that's the age-period when it tends to start.
Sorry I don't have any info on capsaicin but maybe the info provided will help you save spending money, time and energy to find out what else they don't know about CHs.
