I boil either the saugages or hamburger for 45 minutes, poke the saugages to get all the fat out or drain the water from the hamburger, don't need the fat, toss that in a large pan with cut-up fresh tomatoes, mushrooms, onions, green peppers, celery, and just a little fresh garlic, minced, add a couple of cans of Contidina tomatoe paste, lots of water, and just let it simmer, stirring once in while until the sauce has a deep red color, my son likes to add some olive oil to the pasta, we found Creamette brand in the US to be about the best, to keep the stuff from sticking to the bottom of the pan, but you are correct, you need a big pot with lots of water and a fast boil, but I cheat here as that big pot won't fit in my dishwasher with the big pot for the sauce, now you can't expect me to hand clean pots, that's going too far.
