Parmigiano----(parmesan) a trigger?!?

Sorry Bob, in Italy we eat approx 5 Kg per person of parmigiano (parmesan). In my family much more.
It never started a CH cycle, only some more weight....:-).
Two possibilities: the triggers are more "personal" of what we think, or US parmesan (and i think so) is not OUR parmesan.
in fact some pseudo-parmesan in Italy are really terrible. May be that we export only the diossine-parmesan and other poisoned-parmisan.... :-)
More generally you have to know that the worse italian wine goes into US, may be the same for cheese.
If you can, try to control the parmisan crust: if you read PARMIGIANO REGGIANO is the best, if you read GRANA PADANO is good but not too much flavoured, if you read ANY OTHER THING is NOT italian parmesan.
let me know if you found some VERO PARMIGIANO "true parmesan" in US

BTW your face is a typical Reggio Emilia face
(Reggio Emilia is an italian region, where Parmigiano born) I suppose your grand grand grand -parents might be Italian ...:-)
