If Japanese cooking uses much MSG, as is common in Chinese cooking, this may have been the source of your reaction. Your description is common to MSG sensitive people.

Food sensitivity (including alcohol) as a trigger for CH seems to be quite variable between individuals. But many of us have learned to avoid alcohol during an active period. So you might look at your history to see if you can link this kind of response to MSG exposure--and even this might be an inconsistent reaction.
